The taste and texture of fox nuts are just like paneer! This recipe is not only dairy-free but also oil-free and satvic, i.e., it contains no tamasic ingredients like onion and garlic. Ingredients

  • 500g Spinach (chopped)
  • 2 medium-sized tomatoes (chopped)
  • 1 cup fox nuts/makhana
  • ½ cup fresh coconut milk
  • 1 green chilli (finely chopped)
  • 1 teaspoon jeera sabut/ cumin seeds 
  • 1 inch ginger (finely chopped)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cacao butter
  • 1 teaspoon kali mirchi/ black pepper (crushed)
  • 2 teaspoon sendha namak/ rock salt (according to taste)

Method

  • Take a clay pot, add 2 cups of water & allow the water to boil.
  • Add chopped palak leaves, close lid, and cook for 5 minutes on low flame and sauté in between to avoid burning or change in taste.
  • Remove the cooked palak leaves with a strainer and immediately soak the leaves in a bowl of ice-cold water for 1 minute.
  • Blend palak leaves in a blender and make a puree.
  • Roast cumin seeds in a clay pot. Add palak puree and fox nuts to the pot. Cover with a lid and let it cook for 15 minutes.
  • Add chopped tomatoes, green chilies, ginger, coriander powder, cumin powder, black pepper, sendha namak/ rock salt, and coconut milk. 
  • Mix well and switch off the flame immediately. Cover with a lid for 10-15 minutes. 
  • Add cacao butter on top before serving.

Important points to remember

  • Consume it within 3 to 5 hours of being cooked, as after that, the pranic energy of cooked food decreases.
  • Remember to turn off the flame when you add tomatoes and coconut milk because, as per satvic philosophy, we should not cook tomatoes and coconut milk directly over the flame.

  • 2 medium-sized tomatoes (finely chopped)
  • 1 Amala
  • 1 inch ginger (finely chopped)
  • 1 green chilli (finely chopped)
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 2 teaspoon jaggery powder
  • 2 teaspoon peanut butter
  • ½ teaspoon kali mirchi/ black pepper (crushed)
  • 2 teaspoon sendha namak/ rock salt (according to taste)

Method

  • Take a clay pot and add 1 cup water & chopped Turnip/Shalgam. Cook it for 15-20 minutes on low flame and mix lightly in between.
  • When it becomes soft, add green chili, ginger, kali mirchi/ black pepper, turmeric powder, cumin powder, coriander powder, jaggery powder, and sendha namak/ rock salt.
  • Mix well and add grated amla, chopped tomatoes, and peanut butter
  • Mix well, switch off the flame immediately and cover with a lid for 10 minutes. 
  • Garnish with fresh dhania leaves before serving.

Method
